I just wanted to give you word. The beef was picked up, and it was
business as usual pickup without any surprises. Jan was the most
professional with all the details.
A story. The top sirloin steak was a very nice selection. A good cut for
the palette.
An then the story of preparing a beef stew...yesterday at the latest hr.,
I decided I just had to have a stew for dinner. Everything frozen! The
pot was put to stove, frozen bones - in they went.
Since time was very important.. the bones could only be simmered approx.
2 1/2 hrs. And now the meat. The microwave was my assistant. Upon cutting
into smaller pieces and seering, the delicious meat was simmered a little
faster that what is usual..and for about 1 hr. and 20 mins.
I was thinking (and looking) that the meat could be tough, since it's
usually simmered here for much longer at a lower temperature. Following the
simmer, a small amount of vegetables went in. Of course, bay leaf, onion and
a bit of garlic, salt and pepper was included from the beginning.
Well, this was a very delightful stew, indeed. The meat was tender and
tasty sweet..well, there have it! A Christmas story of beef stewing.

We ordered a 1/4 cow from you this year for the
first time. We didn’t know what to expect. Many people had told us that
we may not like the taste of grass fed beef because it is not quite as
fatty as grain fed and has a different taste. We went ahead and ordered
anyways because of the health benefits of the way you raise your cows.
And boy are we glad we did. It has such a mild sweet flavor and is
extremely tender. Even the cuts I usually avoid at the grocery store
(top round, bottom round) have been amazing. I haven’t even gotten into
the t-bones or the tenderloins. Thanks for all your hard work and care
that goes into raising beef in a healthy, high-quality manner. It comes
through in the taste. So...that being said, when can we reserve another
1/4 cow for next year?!!
